Caramel Stuffed Peanut Butter Oatmeal Cookies

Blah, blah, blah, cookies. Wait, did I just say cookies? Yes, I did! Today I wanted to make something similar to the flavor of Twix but not just cookies with Twix chunks in it. I searched and searched with no such luck so I decided to improvise.

I stumbled upon this loaded chocolate chip oatmeal cookie recipe at Roxanna's Home Baking blog and made a few tweaks to get something totally amazing. Please see the link above for the original recipe. 

First, gather all the necessities:
  • 1/2 cup butter, softened
  • 3/4 cup creamy peanut butter
  • 1 1/4 cup granulated sugar
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups old fashioned oats
  • 1 cup chopped almonds
  • Several unwrapped caramels, cut in 1/2
  • 1 1/2 cups semi-sweet chocolate chips

Next, start the delicious process:
  1. In a mixing bowl, add the butter and peanut butter. With the paddle attachment on, beat on low speed until combined. Add in sugar and beat for 3-5 minutes until light and fluffy.
  2. Add in egg, water and vanilla and beat until well combined.
  3. Stir in flour, baking soda and salt.
  4. Last, fold in oats, chopped nuts and chocolate chips. 
  5. Chill the mixture for at least 15 minutes before baking.
  6. Heat the oven to 375F. Line two baking sheets with parchment paper. Set aside.
  7. With a large cookie scooper get a ball of dough and roll between your palms to create a ball.
  8. Insert a caramel half in the center and cover with dough. Re-roll and form the dough ball.
  9. Drop cookie dough ball on the prepared baking sheets.
  10. Bake in preheated oven for 12-14 minutes or until light golden-brown. 
  11. Let cool on baking sheet for 5 minutes then remove to wire racks to cool completely.

Some variations might include: adding M&Ms, different types of nuts, chips and fillings.

The final product came out to tasting like a candy bar and cookie all in one and who would complain about that? These large and deliciously beautiful cookies are great for gifts or just to satisfy your sweet tooth.
