Put the Cherry on Top with Cherry Cheesecake Lasagna!

Many of my friends often ask how to make something simple and sweet without too much baking involved. I love to bake and I find it easy, so I know they think I am crazy when I say something is no sweat at all! You might even think the same thing, but today I SWEAR I am sharing a super simple sweet treat that is great for any event and will be ready in a jiffy and best of all you can even modify the toppings if you are not a cherry fan without ruining the recipe. I know, breaking rules and suffering no consequences...what a dream!!

To all the people I promised to turn into Betty Crockers without any complicated steps, this one is for you!


Cherry Cheesecake Lasagna


Ingredients:

  • 1 ¼ cup of graham cracker crumbs
  • 1/3 cup butter melted and cooled
  • ¼ cup granulated sugar
  • 1, 8 oz package of cream cheese, at room temperature
  • 1 cup powdered sugar
  • 1, 8 oz container of Cool Whip
  • ½  tsp vanilla
  • 1 can cherry pie filling
  • Fresh lemon zest
  • Fresh mint for garnish, optional  

Instructions:

  1. Preheat your oven to 350 degrees.
  2. In a bowl, mix the graham cracker crumbs, granulated sugar, and butter with a fork until combined.
  3. Lightly spray the bottom of a baking dish (I used a 7x 11 size) and add the graham cracker crumb mixture on top. Lightly press down until the pan is evenly coated. Bake for 10 minutes and remove from the oven. Allow the crust layer to cool completely.
  4. Using a stand mixer or hand mixer, beat the cream cheese until smooth. Add in the cup of powdered sugar a little bit at a time and beat the mixture until combined and smooth. (This is VERY important...don't add it all at once and stick to adding a bit at a time!)
  5. Add the Cool Whip to the cream cheese and sugar mixture and beat until combined.
  6. Top the graham cracker layer with the cream cheese mixture.
  7.  In a separate bowl, add a little fresh lemon zest into the cherry pie filling to freshen it up and mix to combine.
  8. Add the cherry pie layer over the cream cheese layer.
  9. Place the Cherry Cheesecake Lasagna in the fridge and let it chill for a minimum of one hour.
  10. When you are ready to serve it to your favorite guests, take it out of the fridge and cut into sweet slices, the size of your heart’s choosing!
  11. Top each slice with fresh mint and enjoy.
