Candied Brie Cheese Topped Cinnamon Rolls

I am not a morning person—I need time to wake up slowly after coffee. If you hang with me overnight, please be sure you keep this in mind! Even my family jokes that you need a broomstick to wake me up so you don’t have to get too close. This must be why I am such a brunch lover. The meal can be breakfast or lunch and does not require you to get up at any certain time to enjoy it.

If you need a little time to come to as well, I have something easy and delicious for you to whip up for your next brunch celebration! It combines the amazing combo of Brie cheese with the sweetness and cinnamon punch of scrumptious cinnamon rolls. Now, I will say I made this recipe with those that don’t enjoy baking as much or able to deal with lots of moving parts in mind, so feel free to make it all from scratch if you prefer that!

So now that I got you a little more awake and ready to get to work in the kitchen let’s assemble our things and have a kick-ass brunch!

Candied Brie Cheese Topped Cinnamon Rolls


  • 1 can of cinnamon rolls
  • 1 round of Brie cheese
  • ½ cup coarsely chopped nuts (pecans, walnuts or almonds)
  • 2/3 cup brown sugar
  • ½ cup unsalted butter


  1. Preheat your oven according to the cinnamon roll packaging instructions.
  2. Spray a pan lightly with oil spray. I prefer to use a springform pan to make it easier to take them out and serve them. 
  3. Place the prepared cinnamon rolls in a circle touching sides. 
  4. Bake according to the packaging instructions, less 5 minutes. About 20 minutes should be good!
  5. While the cinnamon rolls are baking, chop the nuts and add them to a pot with the brown sugar and unsalted butter to make the candied topping. 
  6. Cook the brown sugar, butter, and nuts on a low heat until the sugar dissolves, stirring frequently. 
  7. Next, cut the top of your Brie cheese round off to make it easier to scoop out. 
  8. Once the cinnamon rolls have baked for their time, less 5 minutes, take them out and scoop the Brie cheese out and place dollops on the cinnamon rolls.
  9. Next, top the rolls and Brie cheese with the candied nut mixture. 
  10. Place back in the oven to bake for 5 more minutes to bake and get even more delicious.
  11. Remove topped cinnamon rolls and serve while still warm and oozy gooey good—enjoy!
